Oatmeal for Breakfast

Almost every morning, Caleb and I eat oatmeal for breakfast. It is cheap, healthy and easy.

This morning, we ate oatmeal, but it was much better than usual. That's because today's oatmeal was in the form of homemade oatmeal cookies that my mom express mailed us. The health factor went way down, but the taste factor went way up, so I think it comes out even.

Thanks, Mom!

(I'd post pictures of the crumbs left on our plate and the smiles on our faces, but Josh isn't home this morning and he has the camera with him.)

did you save Josh any????? or was that the crumbs on the plate for him???? boy are you spoiled...cookies in the mail half way around the world...(when Grampie was in the Navy back in WW2he got a package of cookies that took over 2 mo. to reach him out at sea...when he opened the box, he was not sure just what was in it..all broken up and rather stale!!!)

Have you ever tried baked oatmeal. My favorite!!! I will share the recipe later.

This is the baked oatmeal recipe that was served at Sarah's baby shower. It was FABULOUS. Mrs. Magee (Brenton's mom) said she freezes it in portions and takes it out and microwaves it when they want it.

I am curious to see if compares with Sharon's.

BAKED OATMEAL
-------------

1/2 c. oil
2/3 c. sugar
2 eggs, beaten
3 c. dry oatmeal
1 tsp. cinnamon
1 tsp. baking powder
1 tsp. salt
1 c. milk
1 tsp. vanilla

Mix together oil, sugar and eggs. Add oatmeal, baking
powder, salt and milk. Bake at 350 degrees for 25 minutes.
Serve warm with warm milk.
